Oxtail soup is my favorite, especially in the winter time.
When I have a cold, I naturally go for this because it’s a medical remedy for me. It warms me up and I feel much better.
In Korea, we usually simmer this soup slowly for one day however, this is a quick version because I am using an Instant Pot. If you don’t have this, you can simmer the soup on the stove at least 3 hours and add water regularly.

- 2 lb oxtails
- 1/2 cup of daikon
- some salt and ground black pepper
